The sun is out, the weather is warm and the berries are finally in season! It’s time for some great new summer recipes. Lately, we’ve been loving this easy and healthy crepes recipe.
To make the crepes: Mix the flour, sugar and salt in a large bowl. In a separate bowl, whisk the milk, eggs and vanilla. Then combine these two mixtures, whisking them until your crepe batter is smooth. Cover this mixture and put it in the refrigerator for 15 minutes.
After 15 minutes, spray some cooking spray on a frying pan and put it on low heat. Then put 1/4 cups of crepe batter in the frying pan. I removed the pan from the flame when I added my crepe batter. Then I tilted my pan until the batter spread evenly and put it back on the flame. Flip the crepe until golden. Place the finished crepe on wax paper. You can cut out squares of wax paper and sandwich the wax paper between the finished crepes.
Filling the crepes: You can fill your crepes with whatever you’d like. I chose Greek Yogurt, bright red strawberries and dark blue blueberries for a fun, fourth of July treat! Nutella, peanut butter and some whipped cream are also delicious additions to your crepes!
